It took a while, but we are now open in our Coastal highway one location! Anything worth doing is worth doing right. We are happy to invite you into our new space.  We have added many new menu items, local craft beer, wine, and plenty of seating for the whole family.

Lets not forget what made you love us in the first place, the pasta! Our new pasta machine produces ninety pounds of fresh pasta an hour. The machine is beautiful and is made by Arcobaleno, the only full service pasta machine manufacturer in North America.  We also have a separate pasta machine dedicated to gluten free pasta! We mix seven different flours to create our custom gluten free flour blend that is perfect for pasta.  We offer all of our pasta dishes perfectly customizable to your taste. For all you cooks out there, you can also take our pasta home with you and cook it when you want!

This month we are adding a simple recipe for you to use to sauce our noodles with!

Herbed Brown Butter Recipe

  • Salt and freshly ground black pepper
  • 1 pound cut pasta this recipe works well with our campanelle, spaghetti, or orecchiette pasta
  • 2 tablespoons butter
  • 30 fresh herbs leaves such as sage, thyme, oregano, lavender, rosemary, or what ever you like. You could also use capers, nuts, or anchovy with great flavor success!
  • 1 teaspoon of vinegar or lemon
  • 1 cup or more freshly grated Parmigiano-Reggiano
  • Bring a large pot of water to a boil; salt it. Cook pasta until it is tender, but not quite done.
  • Meanwhile, place butter in a saucepan large enough to hold the cooked pasta; turn heat to medium, and add herbs. Cook until butter turns nut-brown and the herb crisp slightly, and then turn heat to a minimum.
  • When the pasta is just about done, scoop out a cup of the cooking water and add vinegar. Drain the pasta. Immediately add it to the butter-herb mixture, and raise heat to medium. Add 3/4 cup of the water, and stir; the mixture will be loose and a little soupy. Cook for about 30 seconds, or until some of the water is absorbed and the pasta is perfectly done. Stir in cheese; the sauce will become creamy. Thin it with a little more water if necessary. Season pasta liberally with pepper and salt to taste, and serve immediately. Top with more freshly grated Parmesan.
